Lumpiang Sariwa (Fresh Spring Roll) – Pampanga Style
Description
Ingredients:
For the Filling:
- 200g pork, thinly sliced or minced
- 150g shrimps, peeled, deveined, and chopped
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 1 large carrot, julienned
- 1 cup green beans, julienned and cut into 2-inch lengths
- 1 cup sweet potato (camote), julienned
- 1 cup cabbage, shredded
- 1/2 cup water or pork broth
- 2 tablespoons cooking oil
- Salt and pepper to taste
For the Wrapper:
- 1 cup all-purpose flour
- 2 eggs
- 2 cups milk or water
- A pinch of salt
- Cooking oil (for brushing the pan)
For the Sauce:
- 2 cups water or pork broth
- 2 tablespoons soy sauce
- 1/4 cup brown sugar
- 2 tablespoons cornstarch (dissolved in 1/4 cup water)
- 3 cloves garlic, minced
- Peanuts, ground (for garnishing)
Instructions:

Filling:
- In a pan, heat oil and sauté garlic and onions until translucent.
- Add pork and cook until lightly browned.
- Add shrimps and cook for 1-2 minutes.
- Add the julienned sweet potatoes and beans. Pour in water or broth, cover, and let it simmer until half-cooked.
- Add the carrots and cabbage. Cook until all vegetables are tender but still crisp. Season with salt and pepper. Set aside and drain any excess liquid.

Wrapper:
- In a mixing bowl, whisk together flour, eggs, and milk (or water) until smooth. Add a pinch of salt.
- Heat a non-stick skillet or frying pan. Brush with a little oil.
- Pour a ladle of the batter to form a thin pancake. Cook until the top surface is dry, then carefully peel off the wrapper. Repeat with the rest of the batter.

Sauce:
- In a saucepan, combine water or broth, soy sauce, and brown sugar. Bring to a simmer.
- Add the dissolved cornstarch and stir continuously until the sauce thickens.
- Add minced garlic and cook for another 2 minutes. Set aside.

Assembly:
- Place a wrapper on a plate, add a spoonful of the filling, and neatly fold the sides and roll. Pour sauce over the lumpia and garnish with ground peanuts.
